Email addresses in hyperlinks are clearly visible in the HTML code, and easy for spambots to harvest, eg:

 Email me!

The MailTo plugin does not encode this link directly in the HTML.  Instead it disassembles the link into various parts, none of which constitutes a full email address so that it's much harder for spambots to spot.  Then it inserts a small Javascript program that reassembles the link when the user views the page.

Email harvesting programs are not sophisticated enough to dynamically reconfigure pages using Javascript, so they do not see the reassembled link.
