I have search and site map installed on Xone of my sites, but another site wants to have it, too, and I've forgotten how to set it up. They have Google search now, but they want something more customized.

Site map is easy - it's just a type of menu. Use the SimpleMenu plug-in, and select the sitemap option.

Search is usually configured to be a restricted-access plug-in, which means it won't be available to your sites by default. So the first thing to do is enable it:
1. go into the Security plug-in
2. select the site that you want to enable Search on
3. add a new website service
4. select Search from the available plugins
After you save this, the Search plug-in will now be available to you. You can place it into your search page as per usual.
Search won't actually find anything until you build your Search index. You can do that in the Search control panel. You can also configure your sites to automatically rebuild your search index whenever you publish the site.
